Cauliflower contains several beneficial phytochemicals and especially high level of vitamin C, which is missing in the dry grains of either brown or white rice. It will go with any curry and makes a healthy alternative choice.
1 large cauliflower, grated with a grater or food processor
1 teaspoon of ghee or coconut oil
2 tablespoons of water or stock
Sea salt and pepper
Optional: 1/2 tsp turmeric for colour, a small handful of flaked almonds and a tablespoon of raisins
Prepare your cauliflower rice by toasting the almonds. Steam your grated cauliflower with the ghee/coconut oil, turmeric, salt and pepper and a few tablespoons of water in a pan with the lid on for a few minutes, until the cauliflower is tender but not soft. Drain any excess water and taste for seasoning. Top with flaked almonds and raisins.
